Ingredients:
- 8 ounces semi-sweet chocolate, chopped - 1/2 cup water, divided into 1/4 cup portions - 2 tablespoons unsalted butter - 3 egg yolks - 1/4 cup sugar - 1&1/4 cup whipped cream
Directions:
In a double boiler, melt chocolate, 1/4 cup of water, and butter, then leave to cool for 10 minutes.
Meanwhile, whisk egg yolks, 1/4 cup of water, and sugar into a small saucepan, and cook over medium heat, while stirring constantly, until syrup reaches temperature of 160 degrees.
Remove mixture from the heat and whisk in chocolate mixture until combined, then place the pan in an ice water bath and continue to stir until the mixture thickens for about 5 to 10 minutes.
Remove from ice bath and gently fold in whipped cream.
Finally, place in small dishes, cover, and refrigerate for at least 4 hours before serving.
