And they hit again! The Food Architects come back with a yummy, healthy recipe and we just love it. These caramel apples taste just like the real deal, except they're healthy!
Makes 4-6 Caramel Apples
Ingredients
- 4 to 6 apples (with sticks inserted in stem)
- 6 tablespoons honey
- 1/4 cup creamy almond or cashew or peanut butter (we used cashew)
- 1/2 teaspoon pure vanilla extract
- pinch salt
- optional toppings: chopped nuts or toasted coconut + drizzled dark chocolate
Directions
1. Place honey in a small saucepan. Bring to a rolling boil over medium heat, and continue to let it boil for 3 minutes (a little darkening is normal). Remove from heat and stir in nut butter, vanilla and salt. If you feel the mixture is too thick, thin it out with some milk of your choice.
2. Dip apples into caramel, using a spoon to help coat all the sides. Allow the excess to drip off, scraping off any bits that gather at the bottom with a spoon. Place on a greased parchment paper to cool completely. The coating should set once cooled. Store in the fridge until serving.
Optional Toppings
You can dip the freshly caramel-coated apples into chopped nuts or toasted coconut for extra flavor.
